Gluten Free Mini Egg Blondies

 


I have been trying to perfect this recipe for so long and I finally feel like I have got there! These mini egg blondies are delicious, I can promise you that! I absolutely love the taste of them and when you crack open one of the mini eggs the chocolate just melts out, dreamy! I hope you enjoy!

Ingredients:

1) 250g butter (melted)

2) 125g golden caster sugar

3) 125g of light brown sugar

4) 2 eggs

5) 1/2tbsp of xanthan gum

6) 290g plain gluten free flour

7) 1 tsp of vanilla extract

8) 2 x bags of Cadbury's mini eggs

Method:

1) Firstly, melt your butter in the microwave, check it every few seconds and keep stirring until it's all melted

2) Next, mix together your melted butter and both types of sugar in a bowl, mix in well

3) Then, add in your two eggs and vanilla extract, mix well

4) Next, add your flour to the mixture (I sieve the flour into the bowl so there are no lumps) with the xanthan gum and crushed mini eggs. (The way I crush my mini eggs is putting them into a sandwich bag & sealing, then bashing with whatever you have really i.e. a rolling pin!)

5) Finally, add your mixture to your baking tin and bake in the oven for 25 minutes on 160 degrees fan or gas mark 4.

6) When your blondies are baked, sprinkle over some more mini eggs crushed and hole, put back in for another 30 seconds and take out.

7) Finally, cut into slices and serve!

Gluten Free Crispy Chilli Beef

 


Ingredients:

You will need:

1. 2 sirloin steaks (or whichever steak you prefer!) - this is for two people, so if you are cooking for more you will need more steak!

2. Cornflour

3. 1 Egg

4. 1 onion (chopped)

5. 1 pepper (I used red but use whichever you prefer! Chopped)

6. 1 Spring onion (chopped)

For the marinade:

7. 1 tbsp of gluten free soy sauce

8. 1tsp of ginger paste

9. 1tsp of garlic paste

10. 1/2 tea spoon of sugar

11. Salt & Pepper (couple pinches of)

For the sauce:

12. 4tbsp of gluten free sweet chilli sauce

13. 2tbsp of gluten free soy sauce

14. 1tsp of rice vinegar

15. 3 tbsp of gluten free tomato ketchup

16. Pinch of salt

Method:

1. Firstly, cut your steak into thin strips (don't worry if they are not all even!)

2. Next, put your steak strips into a bowl and put together your marinade - once put together, mix your marinade and the steak strips together and marinate in the fridge for 20 minutes.

3. Then, in a bowl mix all of your sauce ingredients together and set aside.

4. Get your egg and crack into the bowl with the marinated strips and mix well.

5. Next, get a large dish and pour some of your cornflour in - probably about 5 mugs worth. Put your beef strips onto the cornflour and mix in well, once mixed in, use your hands so you know it's all coated. Make sure all of the strips are separated also so they are not clunked together.

6. Next, heat your oil in your pan - I would recommend using quite a deep pan for this, I use a wok as you want to put a good amount of oil in to cover your beef strips. Heat the oil for a minute or so and you can drop a tiny bit of the flour mixture in to see if it sizzles - if it sizzles well you know that its hot enough.

7. Next, fry your beef strips in the hot oil for 3 minutes, ensuring you turn every so often to make sure its all cooking well.

8. Once cooked, put your strips onto some strips of kitchen roll just to dry the excess oil off.

9. Next, heat up your oil again and add in your chopped onion & chopped pepper to fry. After a couple of minutes, add in your beef strips and stir well, fry on a low heat for another minute.

10. Once all mixed in well and your onions & peppers are soft, add in your sauce mixture with your spring onion and mix well. Cook on a medium heat for a couple of minutes.

11. Finally, take off the heat and serve!

Gluten Free Scotch Eggs

 


My new and improved Scotch Egg recipe is here! Honestly, it's not often I am impressed with my baking first time round but I am soooo happy with these, they are literally perfect and so delicious. With a golden crumb and a soft egg in the middle, they go perfectly with caramelised onion chutney on the side *drool*

Lets get into the recipe!

You will need:

  1. 6 x gluten free sausages (I used Aldi's own Lincolnshire sausages)
  2. 6 x medium eggs (4 for the scotch eggs and 2 for whisking)
  3. Gluten free plain flour (I like to use Doves Farm)
  4. Gluten free breadcrumbs (I used Asda's packet breadcrumbs)
  5. Spices: paprika, chilli powder & oregano
  6. Vegetable oil
Method:

  1. Boil your eggs in a pan for 8 minutes
  2. Once they have boiled, put them into a bowl of cold water to cool for 10 minutes
  3. Next, skin your sausages, tear them apart and roll into a large ball
  4. Your eggs should be cooled by now so take the shells off and put them aside; Tip - roll the egg with the shell on the counter and the shell cracks easily!
  5. Once rolled up and all merged together, separate the sausage mixture into 4 equal balls
  6. You will need to get 3 separate bowls next; one needs the 2 eggs (lightly whisked), another needs the gluten free flour (I used about 150g) and the other the gluten free breadcrumbs.
  7. In the breadcrumbs bowl, mix in 2 tea spoons of paprika, 1/2 tea spoon of chilli powder and 1 tea spoon of oregano - mix well.
  8. Next, get one of your eggs and wrap one of the sausage mixture balls around the egg, making sure it is all covered; do this with every egg.
  9. Then, take your egg with the sausage wrapped around it, roll it in the flour bowl so it's all covered, then in the egg (wait for the excess to drip off), then roll in your breadcrumbs, making sure it's all covered. Do this with all 4.
  10. I used my air fryer to cook mine but they will work in the oven if you do not have an air fryer. If you have an air fryer, place them in the basket and drizzle a bit of vegetable oil over them, give them a bit of a shake so the oil covers them - then cook them at 200 degrees for 20 minutes (flipping over half way through) keep checking them every few minutes but they will get nice and golden! If you use an oven I would do them on the same temperature for the same time.
  11. Finally, serve! I put a side of caramelised onion chutney with mine - works so well together!

Christmas fudge cookies

 


Christmas chocolatey fudgey cookies.. I mean what more could you want! These are so delicious, they have a fudge brownie like centre with a crunch on top. Full recipe below, I hope you enjoy!

Ingredients:

- 190g caster sugar

- 60g cocoa powder

- 70ml vegetable oil

- icing sugar

- 180g plain gluten free flour

- 2 medium eggs

- 1 1/2 tea spoon of baking powder

Method:

1) Firstly in one bowl, mix together your caster sugar, oil and cocoa powder, so it creates a nice mixture.

2) Then, add your two eggs in and mix together well.

3) In another bowl, mix together your flour and baking powder and then add to the sugar and cocoa mixture. Make sure you mix in well and refrigerate for one hour and a half.

3) Pre-heat your oven to 170 degrees fan/ gas mark 5.

4) Whilst your oven is preheating, sieve your icing sugar into a bowl and roll your cocoa mixture into small balls.

5) One by one, roll your mixture into small balls and dip into your icing sugar mixture, making sure the ball is covered in icing sugar.

6) Once you have done them, add onto a grease proofed baking tray and bake for 15 minutes until there is a slight crunch on top.

7) Then, serve! 😁

Gluten Free Christmas Round-Up 2020


ITS CHRISTMAAAAAS! 🎅🎄🎉

(Sorry I had to start the blog post with that! 😂)

Once again this year there are so many amazing gluten free products out there on the shelves that are such a treat! There is absolutely all sorts from your classic party food (fingers crossed anyway, maybe minus the party bit 😆) to your classics; Christmas pudding's and mince pies.

So lets kick off with the first supermarket, Tesco:

1) Nairn's gluten free savoury biscuit selection


Definitely a returning favourite for me! The Nairn's gluten free savoury selection is back! You get 6 different flavours of crackers from cracked black pepper to cheese oatcakes. These are so delicious and perfect for this time of year! These are £3.75 which is really great value for the amount of crackers you get in there!

2) Christmas Pudding



Now I am not personally a huge fan of Christmas Pudding but I know this will be a favourite to some people! This is gluten free and also milk free and egg free, so perfect if you have allergies to milk or eggs. It's also vegan! The Tesco own Christmas pudding is priced at £3.75.

3) Cookie selection 


This is exactly what it says on the tin (..well box) Tesco's finest cookie selection. These are a huge favourite for me, I bought these last year also and they are absolutely delicious! These are priced at £4.00 and you get Belgian chocolate cookies, Belgian dark chocolate with sour cherries and Belgian chocolate with warm Christmas spices - the perfect Christmas cookies!

4) Orange and maple shortbread


I am a huge fan of shortbread at Christmas, I love dunking them into my cuppa! These are a gorgeous Christmassy flavour as well - orange and maple! How cute is the tin though? You could definitely keep it and re-use it! Their Orange and Maple shortbread is priced at £4.00.

5) Panettone


Again, a huge favourite at Christmas. The classic Panettone, but this one is gluten free! This is quite a small one at 100g and it is priced at £3.00.

6) Chocolate Christmas Trees


Tesco's own chocolate Christmas Trees are back again this year, they almost remind me of them chocolate animal biscuits you had as a kid.. you will know what I mean if you have tried them 😄 these are also milk free and vegan. 

7) Sausage Roll puffs


I think these may be new at Tesco this year as I have not seem them before. Sausage roll flavour puffs.. I mean if you are a huge sausage roll fan, these are perfect for you 😄 Just in time as well as Walker's have just released sausage roll crisps which are not gluten free.. so up yours Walkers!

8) Turkey and stuffing bites


I am sure these were on the shelves last year unless I am thinking of something else. I do actually really like turkey flavoured crisps (Aldi have some also if you scroll further down) It's like Christmas dinner but in a crisp 😄 These are priced at £1.50 and at the moment they are included in a 2 for £2.00 offer on selected Tesco party snacks.

9) Green jalepeno peppers


If you like spice then these are definitely the perfect party food snack for you! I am not personally a fan of Jalepenos so I will stay clear of this one 😆 they are basically peppers stuffed with soft cheese and coated in breadcrumbs. 

10) Mini BBQ ribs


These are another returning Christmas party food favourite for me, Tesco's mini BBQ ribs, they are delicious! 

11) Chicken Tikka Masala bites



These are another party food item that I had last year and these are delicious. You get 12 bites in the pack. When I first saw these last year I was so surprised that they were gluten free. They are spiced chicken & rice bites coated in a crisp crumb. 

12) Ham & Cheese croquettes


Got to love croquettes and a ham & cheese flavour?! What a treat! You get 12 in the pack and they contain smoked ham, mozzarella and cheddar coated in a gluten free parsley breadcrumb.. delicious!

                                                                                                                                                   

Aldi:

1) Mince Pies


Aldi's mince pies have returned again this year, you get 4 in a pack and they are also milk free. These are priced at £1.35 a pack.

2) Sponge Puddings


Another returning favourite at Aldi this year, I also love how the packaging has changed on their Christmas products. These are the sponge puddings and they do two flavours; syrup and chocolate. I bought some of the Chocolate ones again this year and probably will do again in a few weeks time 😄 you get 2 sponges in each pack and these are priced at £1.79 each, which is great value!

3) Christmas Pudding


Another returning favourite from Aldi this year, their free from Christmas Pudding. This serves 4 people and is also vegan. From memory I think this was £2.39 but I will double check next time I go!

4) Christmas Crisps - Turkey & Stuffing, Pigs in Blanket and Turkey & Stuffing flavoured Tortilla Crisps



So I have tried the turkey and stuffing and the pigs in blankets before and I think they are really nice. As I said a bit further up the turkey and stuffing one is literally like a Christmas dinner in a crisp 😄 what's not to love?! I'm not sure I have seen the tortillas before, so I think they might be new this year. These are just 75p each so cheaper than the Tesco ones!

5) Gingerbread frosting & chocolate orange frosting



The only frostings you will need this Christmas in the special buys in Aldi!! How amazing do these look?! No gluten free symbol on them but they have no gluten containing ingredients and no may contains!!


Marks and Spencer:


1) Chocolate dipped honeycomb



How delicious does this chocolate dipped honeycomb look?! It's also the perfect stocking filler for Christmas. Love the idea!

2) Mince Pies



The classic gluten free mince pies.. I'm not a huge fan of them but the M&S ones are really nice. There is just something about M&S food, it's all great quality and you can't really go wrong with it!

3) Christmas Cake Bites



These are not within the made without wheat packaging but they have a cheeky gluten free symbol on the front! They look delicious!

4) Christmas Cake



An actual iced Christmas cake! Now this is something I haven't found anywhere else. How cute is the Christmas tree pattern on it?! Great expiry date as well so if you just wanted to get it in and keep for Christmas or after you could!

5) Tortilla Stars


I am a huge fan of M&S crisps as they have such a good range, loads that are naturally gluten free. These Christmas ones look perfect for chips and dip 😄 maybe for Christmas Eve?! 

6) Christmas Pudding


Of course the classic Christmas pudding is back this year at M&S! Not only is it gluten free but it is dairy free as well which is fab!

7) Iced fruit cake


Another returning favourite at M&S this year - this looks perfect to have with a cuppa! Again like all fruit cakes, great expiry date so you can buy and keep it in the cupboard for Christmas.


Party food: So the majority of the standard party food listed below was £5.00 each and the M&S collection products were £7.00 each. They are on the pricey side which is why I did not buy loads to try but they are all on a 4 for 3 offer if you did fancy getting a few of them in, which is handy! 

1) Mini chicken kievs


I mean what more could I say about these.. these are sooo good. I bought them the day I found them and had them for dinner with some cheshire farm potatoes and it was honestly beige heaven! They're that nice, I was trying to eat little bites to try and save them as much as possible 😄

2) Delish pigs in blankets


A must on the Christmas dinner! I have never tried these ones from M&S but I can imagine they are just as nice as the other party foods. The thing with M&S is that it's always great quality, you can never go wrong with them really!

3) Sticky Asian style chicken lollipops:


Now I was really lucky with this one because I managed to find them in the reduced section 😄 reduced to £3.94 so I had to buy them!! I have frozen these for our usual Christmas Eve party food dinner, so I will let you all know what I think of them over on my insta! How amazing do they look though!!

4) Prawns in blankets


What an amazing twist on the classic pigs in blankets! I absolutely love prawns, so I will definitely be buying these next time I go to M&S. These were reduced as well, but I didn't buy these this time because I bought the Kievs and the lollipops 😄

5) Sticky chicken Yakitori kebabs



Honestly, I just love the look of all of the party food this year at M&S so I think these look amazing as well! Another one that I will definitely be buying when I next go!



Morrisons (features gifted products):


1) Rudi the Reindeer Yule Log



How amazing is Rudi the Reindeer Yule Log though?! Chocolate cake is my favourite type of cake so I am so excited about this! I have tried some of him and can confirm the chocolate cake is amazing.


2) Truffles advent calendar


Yep! You heard it right! A Morrison's gluten & milk free truffle advent calendar! How cool is this?! So luxurious as well 😄 can't wait to start on the 1st December! 

3) Christmas Pudding



Two Christmas pudding's from Morrisons this year - the larger one is also milk free. The larger one serves four people and the smaller 3 months matured one serves one person. How amazing is the packaging on the little one as well? Love it!

4) Chocolate Christmas Game



How cute is this little reindeer chocolate game?! It's a perfect stocking filler for the little ones! Not only gluten free but milk free as well.

5) Gingerbread and Butterscotch pudding


I mean how amazing does this look?! Gingerbread and Butterscotch.. the perfect Christmas combo. This is so ideal for a Christmas day pudding if you are not into Christmas pud!

6) Maple crumble mince pies



Well it's fair to say these got demolished within 5 mins of opening them 😄 I've talked about further up how I am not a huge fan of mince pies but honestly these tasted so amazing. They're not only gluten free but milk free as well. It's such a great twist on the classic mince pie.


7) Pannetone 



Mini Panettone, how cute! Gluten free & vegan. Another perfect stocking filler!

8) Onion ring crisps


I am so glad Morrisons have bought these out because Morrisons is much closer to me than Tesco, so I can't always get to Tesco 😄 Onion ring crisps are my absolute fave and they're also perfect for snacking at Christmas! These are also milk free which is a bonus! Someone recommended to me on Instagram that you dip them in a sour cream & chive dip so I will definitely be doing this!!

9) Cracker selection


How amazing do these look?! The herb and onion one sounds sooo good, I've never had herb & onion crackers before but they sound right up my street! They are also milk free which is a bonus. A must at Christmas!

10) Shortbread



These sound amazing also! Shortbread selection that's not only gluten free but milk free as well! Milk free shortbread!! Looking forward to tucking into these 😋



Co-Op:

1) Chocolate Yule log brownies


Need I say anymore about these beauties! Returning favourite from the co-op again this year, I tried these last year for the first time and was not disappointed! 

2) White Chocolate & Cranberry Cookies & Dark Chocolate, Spiced Rum & Raisin Cookies:



How amazing are the flavours for these cookies?! Bravo Co-Op! They are classic Christmas flavours and look delicious. Got to love a Christmas cookie! These are £2.25 each which I do find to be quite on the expensive side!

3) Burnt caramel sponge pudding


Caramel is another favourite flavour of mine and this looks absolutely delicious. It's £4.50 which isn't too bad as it's quite big. Again another perfect alternative to Christmas pudding if you are not a fan, on Christmas Day.

4) Mince Pies



Another returning favourite from the Co-Op. They are not only gluten free but milk free as well. They are also £2.00 which I think is really good value.

5) Cranberry & Orange Tiffin Bites and Mini Iced Fruit Cake Bites



How cute are these though?! I think these would be really good to wrap us as a stocking filler. They're the perfect size! Not only gluten free but milk free and egg free also, so perfect if you have multiple allergies. These are £2.50 per pack which is not bad!
